Bikini Recipe
Yields 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Combine every components into a pan, bring to a light boil, agitating until the sugar dissolves. Next, take off the heat allowing it to cool fully. Transfer into a sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for about a month.
Preparing the Cocktail Base: Combine all the liquid ingredients into one sizeable container, leave to sit for an hour, then strain best through a fine cloth, to ensure it's fully clarified.
For serving: Pour 85ml of the batch mix into a stirring glass containing ice, gently stirring carefully for about 60 seconds to cool it down. Filter to a frosted cocktail glass or a similar vessel, garnish with a few cranberries adding the final touch with a quick spritz of the essential oil over the drink.
